You turn into the wind, drop sails, and let the ship slow down naturally. Drag from the wind and waves takes care of that. There's usually a smaller sail we'd use for extra drag, but you don't want it to catch so much wind you start moving backwards.

Then once you've slowed, you just drop the anchor.
